The production of cheese is a complicated one involving various processes for the different varieties available. Cheese is made from the milk of cow, sheep, goat, buffalo, camels and/ or goat. But the basic principle involves the curdling and coagulaation of milk that it forms curds and whey. Since the cheese making process solidifies milk-proteins and fat, cheese can be said to be a tasty way of preserving milk. Cheese is highly nutritious and contains proteins, Calcium, Zinc, Phosphorous, Vitamin A, Vitamin B12 and Riboflavin. Though it is good for Osteoporosis, bone strength, Cavity prevention and cancer prevention, it has its own disadvantages. It is harmful for people with high blood pressure, blood sugar and those who want to lose weight.

It is considered as a favorite appetizer at parties and adorns almost all the sandwiches. Most of the Italian and Mexican dishes would use cheese in their entire entrée. The popular varieties of cheeses are Swiss, Monetery jack, American cheese, Colby, Mozarella, Provolone, Cheddar, Brick, Cottage cheese, Parmesan and Blue cheese. The cheese industry remains highly under penetrated in Nigeria mainly due to its lack of awareness whereas in Egypt it is consumed with almost every meal. In India the cheese industry is valued at nearly 500 crores with the leading brand being Amul. In the Middle East goat cheese is quite popular. United States is continuously seeing a rise in the demand for its different variants and this industry along has crossed a 10 billion dollar mark. There could be nearly a hundred different types of cheese as every country has its own version of it. Feta, a European cheese dish is one of the most favorite of the Europeans. Some of the leading brands of cheese include Pamigiano Regiano, Kraft, Sargento, Hennings, and Tillamook etc.

Cheese can be found in almost all the dishes such as pizza, pasta, cakes, chips, burgers etc. It has almost become a part of our daily diet. The major issue with this is it has resulted in obesity. Constant consumption of cheese has resulted in weight gain and health loss. Due to the easy availability of cheese the price have been stable in the past and is expected to hold its pace in the future also.
